Steak Au Poivre

This recipe can be made on the grill or in your kitchen. When grilling, I prefer a fattier ribeye and enjoy a good NY strip when cooking indoors. 


Ingredients

  • Your favorite quality steak(s)
  • Prancing Pig Salt & Pepper Rub - about 4 tsp per steak. 


Directions 

  1. Remove steaks from refrigerator and rub with 2 tsp of Salt & Peppers Rub on each side of your steak. 
  2. Cover with plastic wrap and let stand at room temperature for one hour.


When Grilling

  1. Preheat Grill on High, setup for indirect grilling.
  2. Grill steak on a very high temperature, over the heat, for one minute per side. If your grill is hot enough, you should have good browning.
  3. Move the steak off the direct heat and allow to cook to desired temperature.


When Cooking Indoors

  1. Preheat your oven to 350°.
  2. When you are ready to cook, preheat a stainless or cast iron pan to a very high temperature. Put about one tablespoon oil in the pan. The pan is hot enough when the oil begins to smoke.
  3. Sear the steaks one minute per side.
  4. Put the frying pan with the steaks in the oven and cook to desired temperature. You should reach medium rare in 6-8 minutes.
