Spicy Roasted Potatoes

A big thank you to Peter for providing this great recipe!


Ingredients

  • 3 lbs Idaho potatoes washed, cubed (unpeeled)
  • 2 sticks butter
  • 2 tbsps olive oil 
  • 1 tbsp minced garlic
  • 1 large yellow onion, diced
  • 1 cup Prancing Pig Achiote & Habanero Chili Sauce


Directions 

  1. Preheat oven to 350°
  2. Bring potatoes to boil in enough salted water to cover; boil for 30 minutes until fork tender; drain well
  3. Meanwhile, melt butter over medium low heat in a large saucepan; add oil
  4. Saute onions and garlic until onions are soft
  5. Add chili sauce and potatoes; stir to coat well
  6. Transfer potatoes to 9x13 baking pan
  7. Bake for 30-45 minutes, depending on
    desired crispness 
  8. Serve hot
